Sour Cream Chicken Enchiladas


 Ingredients

1 Rotisserie Chicken

1 Fresh Jalapeño

1 Cup Of Sour Cream

1 1/2 Cup Of Chicken Broth 

Flour Tortillas( I use 4)

1/4 Tsp Salt

1/4 Tsp Chili Powder

1 Tbs Butter

2 Tbs Flour

1 Cup Of Shredded Monterey Jack Cheese(Buy the block and do the shredding yourself)

Instructions

Step 1. Preheat your oven to 350 degrees

Step 2. To start your sauce melt the 1 Tbs of butter on a sauce pan and once butter is melted add the 2 Tbs of flour and whisk it.

Step 3. Once made the roux add in the 1 1/2 cup of broth and 1 cup of sour cream and whisk until thick and don’t forget the salt, black pepper, and chili powder.

Step 4. Put your sauce on a low heat and let sit, you will then start to roll your enchiladas with the chicken, sliced fresh jalapeños and cheese. I like to put some of my cheese in first that way it acts as a glue when cooking. 

Step 5. Once the oven is heated to 350 degrees pour the sauce over the enchiladas and sprinkle some extra cheese on top if you’d like. 

Step 6. Place in the oven for 20 to 25 minutes

Step 7. Take them out of the oven and severe with whatever you desire.
