Sour Cream Chicken Enchiladas
Ingredients 1 Rotisserie Chicken 1 Fresh Jalapeño 1 Cup Of Sour Cream 1 1/2 Cup Of Chicken Broth Flour Tortillas( I use 4) 1/4 Tsp Salt 1/4 Tsp Chili Powder 1 Tbs Butter 2 Tbs Flour 1 Cup Of Shredded Monterey Jack Cheese(Buy the block and do the shredding yourself) Instructions Step 1. Preheat your oven to 350 degrees Step 2. To start your sauce melt the 1 Tbs of butter on a sauce pan and once butter is melted add the 2 Tbs of flour and whisk it. Step 3. Once made the roux add in the 1 1/2 cup of broth and 1 cup of sour cream and whisk until thick and don’t forget the salt, black pepper, and chili powder. Step 4. Put your sauce on a low heat and let sit, you will then start to roll your enchiladas with the chicken, sliced fresh jalapeños and cheese. I like to put some of my cheese in first that way it acts as a glue when cooking. Step 5.
